I love pesto and am always looking for new recipes that put a spin on the classic basil/pine nut combo. Parsley and cilantro are very powerful natural green plant foods, great for detoxing heavy metals out of the body.
4 clove garlic
1/3 c. macadamia nuts
1/3 c. sunflower seeds
1/3 c. pumpkin seeds
1 c. cilantro
1 c. fresh parsley
2/3 c. extra virgin olive oil
4 tbsp. lemon juice
sea salt to taste
Soak the nuts and seeds overnight to release their enzyme exhibitors.
Combine parsley, cilantro, and olive oil in a food processor. Process until chopped.
Add garlic, nuts and seeds, lemon juice, and sea salt. Process until mixture is finely blended into a paste.
Store in dark glass jars if possible. Refrigerate or freeze. Enjoy!
