If you are in a hurry and need to grab breakfast or a snack this is perfect. Just make a batch, refrigerate, and when you're short on time grab one, pop it in microwave for a few seconds and you're on your way!!
6 egg
1/4 c. onion
1 oz. cheese, any type
6 oz. Italian turkey sausage
1/4 c. bell pepper, any color
1/2 c. diced tomatoes, fresh
sea salt & black pepper to taste
Preheat oven to 350ºF. Grease 6 cups of a muffin tin with coconut oil.
Whisk up eggs in a mixing bowl.
Slice the turkey sausage into rounds and then quarter the rounds (the smaller pieces work better). Add to eggs.
Mix the chopped tomatoes, chopped onions, and chopped bell peppers into the eggs. Season the mixture to taste. Stir well to distribute the ingredients evenly. Ladle into muffin cups. Evenly sprinkle the cheese between the 6 muffins. Do not overfill muffin tins. If you have any left you can just scramble them up and you have another meal or snack!
Bake for 20-30 minutes. Top should be brown and a toothpick inserted in the center should come out clean.
You can also double this recipe and store the leftovers in an airtight container in the fridge.
