A hearty, chunky, satisfying meal.
5 garlic
1 jalapeno pepper
2 tbsp. chili powder
1 tbsp. ground cumin
1 tsp. ground coriander
1 tsp. dried oregano
1/2 tsp. sea salt
3 c. beef broth
1/2 c. cilantro, bunch, fresh, organic
1 c. diced tomatoes, fresh
2 c. canned pinto beans
1 1/4 lbs. ground beef
2 c. bell pepper, any color
1 c. onion
Brown the beef (can substitute stew meat for ground beef). Add the diced bell pepper (can use any combination of red, green, orange, yellow), diced onion, minced garlic, and diced jalapeno. Cook about 8 minutes. Add the spices, salt, beans, tomatoes, and beef broth. Stir well. Bring to a boil. Reduce heat to medium-low and allow to simmer, uncovered for about 40-45 minutes, or until it has reduced to a chili-like consistency - nice and thick. For the last 15 minutes of cooking, stir in the 1/2 cup of cilantro. Serve immediately and enjoy!
