Healthy Pigs in a Blanket

Does that say Healthy Pigs in a Blanket? It sure does! It’s amazing how almost any pastry or treat can be tweaked to fit into a healthy lifestyle. This appetizer contains only six ingredients, which is even more exciting considering they are just as flaky and delicious as some of those toxic, processed pigs in a blanket at typical parties


    1 1/2 c. almond flour

    1/4 tsp. baking soda

    1/4 tsp. sea salt

    1 egg

    1 tbsp. coconut oil

    8 hot dog, beef, uncured, nitrite-free


Preheat oven to 350ºF and line baking sheet with parchment paper. Cut hot dogs into thirds. Melt coconut oil and let cool.

Combine almond flour, sea salt, and baking soda in a medium bowl. Add egg and coconut oil; whisk until a ball of dough forms.

Place dough on a parchment paper covered cutting board. Place another piece of parchment paper on top. With the dough in-between parchment paper, use a rolling pin to roll out dough until it is a flat, thin sheet, approximately ⅛” thick.

Cut strips approximately 1” to 1 ½” wide to make a blanket for each hot dog third. Carefully wrap each pig in a strip, forming the dough firmly around each. Place all pigs in a blanket on the parchment paper lined baking sheet.

Bake for 20-30 minutes, until dough is cooked through and lightly browned. Serve with Dijon mustard, ketchup, honey mustard, or a healthy dip of your choice! One serving is three Healthy Pigs in a Blanket.
