Healthy Peanut Butter Fingers

Ingredients

    1 1/2 c. oat flour

    1 1/2 c. old-fashioned oats

    3/4 tsp. baking soda

    1/2 tsp. sea salt

    2 tbsp. cacao powder

    2 tbsp. maple syrup

    2 tbsp. coconut oil

    1 tbsp. canned coconut milk

    3/4 c. peanut butter, creamy

    3/4 c. butter

    2 tbsp. stevia

    2 tbsp. maple syrup

    3/4 c. peanut butter, creamy

    2 egg

Directions

Preheat oven to 325ºF. Grease a 9x9 baking dish with coconut oil or butter. Combine butter, stevia, 2 tablespoons maple syrup, 3/4 cup peanut butter, and eggs in a bowl. Mix well. In another bowl, combine oat flour, oats, baking soda, and sea salt. Mix well. Fold dry ingredients into wet ingredients. Mix until well combined. Pour batter into baking dish. Bake for 18-20 minutes, until a toothpick inserted in center comes out clean.

While the bars are baking, make the glaze: Combine cacao powder, 2 tablespoons maple syrup, coconut oil (NOT liquid consistency), coconut milk, and 3/4 cup peanut butter. Stir to mix well.

When bars are done, remove from oven. Spread glaze on hot bars. Let cool before enjoying.
