Don't let the name fool you - this treat tastes just as good as the high fat and sugary one.
3 c. cottage cheese
4 oz. Greek yogurt
2/3 c. honey, raw
3 egg
2 tsp. vanilla extract
3 1/2 oz. almond meal
1 tsp. cinnamon
3 tsp. coconut sugar
2 tbsp. coconut oil
For the Base: Combine almond meal, cinnamon, and coconut sugar in a small bowl. Pour melted coconut oil into almond mixture and stir. Transfer to 8x8 baking dish (or a round pie dish) and pat flat to cover the bottom.
For the Filling: Using a hand blender or Cuisinart, puree cottage cheese and yogurt together until smooth. Transfer cottage cheese/yogurt mixture to bowl. Using a hand mixer, lightly beat in honey and vanilla extract. Beat in eggs one at a time. Pour mixture over almond base and bake at 300°F for 45 minutes. Let cool and cut into 12 squares.
