This is almost paleo and could be with adjustments. In any case, it is just as delicious as any recipe for chocolate chip cookies.
2 1/2 c. almond flour
1/2 tsp. sea salt
1/2 tsp. baking soda
1/2 c. butter
1/2 c. coconut sugar
1 tbsp. vanilla extract
1/2 c. chocolate chips
Preheat oven to 350°F. Line baking sheets with parchment paper (essential). Combine almond flour, salt, and baking soda. Whisk together in separate bowl: melted butter, coconut sugar, and vanilla. Stir wet into dry until thoroughly combined. Fold in chocolate chips. Refrigerate dough for 20 minutes (essential). Squeeze and roll about a tablespoon of mixture into a ball and place on baking sheet lined with parchment paper. Repeat until all mixture is used up. Makes 12-16 cookies. Bake 7 to 10 minutes, until lightly golden.
