Beef and veggie soup
1 lbs. ground beef
1 onion
1 green bell pepper
1 jalapeno pepper
3 med. tomato
2 garlic
1 zucchini
1 c. white mushrooms
32 oz. chicken stock
2 c. spinach
Add 1 lb lean ground beef, 1 onion, 1 jalapeno and 1 bell pepper (chopped) to a pot and cook until beef is cooked and veggies are softened. Add 3 medium tomatoes, chopped garlic, halved and sliced zucchini and 1 cup sliced mushrooms. cook for another 5 minutes. Add qt of chicken stock from a chicken you boiled previously and 2 cups spinach. Simmer for half hour.
