Ground Beef and Sweet Potato Soup

Tasty beef and vegetable soup.


    5 c. beans, mixed, canned, your favorite, organic

    28 oz. diced tomatoes, canned

    4 tbsp. coconut oil

    2 garlic

    2 med. summer squash

    1 sweet potato

    sea salt & black pepper to taste

    seasoning, cajun, organic to taste

    2 c. chicken stock

    1 lbs. ground beef

    1 1/2 med. onion

    1 1/2 med. green bell pepper

    3 celery stalk, fresh, organic


Chop all the vegetables into bite size pieces. In a large stock pot add coconut oil, onions, bell peppers, celery, and garlic; cook until softened. In fry pan cook the ground beef. After veggies are softened add the cooked ground beef, sweet potato, squash, beans, and tomatoes; cover all with water or stock. Bring to a boil then simmer for 45 minutes to an hour until sweet potatoes are soft.
