All the flavor of pizza in a gluten-free casserole dish!
1 med. cauliflower
2 tsp. extra virgin olive oil
sea salt & black pepper to taste
1 lbs. ground beef
2 clove garlic
Italian seasoning to taste
14 1/2 oz. diced tomatoes, canned
1 c. tomato sauce
1 c. mozzarella cheese
Preheat oven to 425ºF. Line a baking sheet with parchment paper. Arrange cauliflower florets in a single layer on the baking sheet. Drizzle cauliflower with olive oil, and season with sea salt and pepper. Bake for 20 minutes.
When the cauliflower is about halfway through cook time, start browning ground beef in a pan over medium heat. Just before the beef is done cooking, stir in minced garlic and Italian seasoning. Move cooked ground beef to a large bowl.
When cauliflower is done, remove from oven, and set aside. Reduce oven heat to 350ºF.
Add roasted cauliflower, diced tomatoes (drained), tomato sauce, and ¾ cup shredded mozzarella cheese to the bowl with the ground beef. Stir to mix well. Move mixture to an 8x8 baking dish. Top with remaining shredded mozzarella cheese.
Bake for 25-30 minutes, until cheese is melted. Remove from oven, and serve warm.
