You can vary the veggies to suit your tastes.
1 bell pepper, any color
1 zucchini
1 yellow squash
1 onion
1 garlic
1 white mushrooms
Place the vegetables in a bowl and toss with a little olive oil and your favorite spices. Let the flavors mingle for a little while.
Arrange a couple of healthy handfuls of vegetables in the center of the foil.
Grill for about 10 minutes. Flip packet. Grill for another 10 minutes or so.
Note: If you cut your vegetables very thinly or used butter instead of olive oil, you may not want to grill on direct heat. Or just pay close attention and grill for less time.
One serving is one cup of veggies.
