Very yummy, quick and easy recipe!
1 orange bell pepper
2 c. cremini mushrooms
1 bch. asparagus
2 c. broccoli
1 sml. cauliflower
2 sml. zucchini
1/3 c. lemon juice
1/3 c. extra virgin olive oil
1 1/2 tsp. sea salt
1 tsp. black pepper
4 c. vegetable broth
2 c. white quinoa
1/2 c. extra virgin olive oil
1 tsp. sea salt
2 tbsp. Italian seasoning
1 med. red onion
1 med. red bell pepper
1 med. yellow bell pepper
Rinse quinoa in cold water and place into sauce pan. Add vegetable stock and bring to a boil. Boil rapidly for 5 minutes, cover, and turn heat off. Keep covered for 20 minutes. Chop all vegetables into bite sized pieces and combine in a large bowl. Add olive oil, sea salt, black pepper, and Italian seasoning. Mix well. Grill vegetables on BBQ until tender. Mix vegetables and quinoa together. Add dressing and toss. Cool before serving.
