Grilled chicken breasts broiled or grilled with an herb butter remain nice and juicy! Leftovers are great the next day.
4 chicken breast
1/2 c. butter
1/4 tsp. dried thyme
1/4 tsp. dried rosemary
1/2 tsp. dried parsley
3 garlic
sea salt & black pepper to taste
Preheat oven to broil - or preheat BBQ grill. Line a broiler pan or the BBQ grate with aluminum foil (this helps retain the butter mixture for basting). Place chicken on the foil. In a small bowl combine the butter and spices and mix together, then evenly spread on each chicken breast. Broil or grill, turning frequently and coating with remaining herb/butter mixture, for about 15 minutes or so, chicken juices will run clear.
Leftovers make a delicious chicken salad the next day!
