Marinated grilled organic Atlantic haddock served with Strawberry Cilantro Salsa... delicious!
1 tbsp. extra virgin olive oil
1 tbsp. lemon juice
1 tsp. sea salt
1 tsp. black pepper
2 med. tomato
1 tbsp. lime juice
1/2 lrg. avocado
6 strawberries
1 tbsp. cilantro
1/4 tsp. cayenne pepper
1 tbsp. extra virgin olive oil
3 drp. liquid stevia
16 oz. haddock, fresh, wild-caught
Prepare the marinade: whisk together olive oil, lemon juice, sea salt, and pepper in a small bowl.
Prepare the Strawberry Cilantro Salsa: combine chopped tomatoes, lime juice, chopped avocado, chopped strawberries, finely chopped cilantro, cayenne pepper, olive oil, and stevia in a large bowl. Mix well. Cover and place in refrigerator about an hour before you grill the fish.
Cut the haddock into 4 (4-ounce) pieces, and place in a glass baking dish. Spoon equal amounts of marinade on both sides of the fish. Cover and place in the refrigerator for at least one hour before grilling. Grill the fish for 3-5 minutes on each side, depending on the thickness of the fish (I grill mine on a George Foreman Grill). Oil the grill on top and bottom of grill, so fish will not stick.
Serve fish on plates, with equal amounts of salsa on top.
