Found this sweet hot recipe for grilled eggplant on the Internet. So great for when I need something different to keep me interested. It was fairly easy to make BD friendly.
2 tbsp. fresh ginger
1 pinch sea salt
1 dsh. garlic powder
1 sml. eggplant
4 tsp. extra virgin olive oil
2 tbsp. coconut oil
4 tbsp. honey, raw
1/2 tsp. red pepper flakes
1/3 lime
Cut the eggplant into 12 - 1/2" pieces. Brush each slices on both sides with the olive oil. Grill or saute all the slices on both sides till they are done. Put them on a plate and sprinkle with garlic powder till you make the sauce. Heat the coconut oil and the honey in a small pan on low heat till they are warm and runny. Turnoff the heat and add the grated lime and ginger, the red pepper flakes and the sea salt. A serving is 3 slices of eggplant with about a tsp of sauce drizzled on each slice.
