Great as a topping or as a dip!
4 lrg. green tomatoes
1 med. yellow bell pepper
1 tbsp. ground coriander
1 jalapeno pepper
1 med. onion
1/4 tsp. sea salt
1 tsp. honey, raw
2 tsp. red wine vinegar
Dice the tomatoes, onions, peppers, and jalapeno. Mix tomatoes, onions, peppers, coriander, jalapeno, and salt in a bowl. Allow to sit for 30 minutes. Pour off juice and add honey and vinegar. Refrigerate for 30 minutes before serving.
