The combination of lime, sweet grapes, raw veggies, fresh herbs, and creamy avocado makes this salad overwhelmingly healthy and downright delicious.
3 tbsp. extra virgin olive oil
1 1/2 tbsp. lime juice
1 tsp. lime zest
sea salt & black pepper to taste
4 c. cooked quinoa
1 1/2 c. cucumber
1/2 c. fresh mint
1/2 c. fresh parsley
1 med. avocado
2 c. green grapes
Cook quinoa according to package instructions. Let cool while you prepare the rest of the salad.
Half grapes, dice cucumber, chop mint and parsley, and dice avocado.
In a large bowl, whisk together olive oil, lime juice, and lime zest. Season with sea salt and pepper. Add cooled quinoa, halved grapes, diced cucumber, chopped mint, and chopped parsley; mix until combined well. Fold in diced avocado. Serve chilled.
Optional: Store in refrigerator, covered, for one hour before serving
