Green Pepper Crust Pizzas

These little green pepper pizza 'boats' are so good filled with tomato sauce, turkey pepperoni, mushrooms, onions and cheese! Great for a snack or as a side at a meal. We all loved them! :)


    2 lrg. green bell pepper

    3 oz. mozzarella cheese

    17 turkey pepperoni

    8 oz. tomato sauce

    1/3 c. white mushrooms

    4 tbsp. red onion

    1 tsp. honey, raw

    1 tbsp. parmesan cheese

    sea salt, pepper, and garlic to taste


Preheat oven to 350 degrees F.

Cut each pepper lengthwise into thirds, so you have six 'boat' shaped pieces. Discard stems and seeds.

Place pepper pieces on a baking sheet sprayed with olive oil or on parchment paper. Bake in the oven for 25 to 30 minutes or until the peppers are slightly soft and the edges look cooked.

While the peppers are baking, in a medium bowl, mix the tomato sauce with sweetener (to taste). Season with salt, black pepper, onion powder and garlic powder. Then, stir in mushrooms and onion. If you want, you can saute the mushrooms & onions for a minute or two first before you add it to the tomato sauce mixture.

Once the peppers are done, remove from the oven and set aside. Leave oven on! Once peppers are cool enough to handle, blot any excess moisture from inside the pepper pieces!

Evenly distribute veggie/sauce mixture among the pepper 'pizza crusts", about 2 Tablespoons (approx) for each one. Top with chopped turkey pepperoni. You could use a different meat topping if preferred

Evenly distribute mozzarella cheese among the pizzas. Use more cheese if you want to Bake in the oven for 10 minutes, until cheese has melted.

Remove pepper pizzas from the oven and top each with 1/2 teaspoon Parmesan cheese. Let cool slightly.

Makes 3 servings (of 2 pepper pizzas each)
