A colorful side dish served warm or at room temperature. A nice side dish for the upcoming holidays!
1 tbsp. extra virgin olive oil
2 tbsp. fresh ginger
1/2 tsp. ground coriander
1/4 tsp. red pepper flakes
1 lbs. green beans
sea salt & black pepper to taste
3 med. plum tomatoes
1 tbsp. lime juice
In a large skillet (with lid), heat olive oil over medium heat. Add ginger and coriander and cook about 1 minute. Increase heat to medium-high and add green beans, season with Sea Salt and Red Pepper Flakes; cook, stirring until beans just begin to soften, about 5 minutes. Add tomatoes and cook, stirring, about 3 minutes. Add 1/4 cup water and reduce heat to medium; cover and cook about 5 more minutes. Uncover, increase heat to high, and cook until liquid is reduced, about 5 minutes. Stir in Lemon or Lime juice and season to taste with addition Sea Salt and Ground Black Pepper. Serve warm or at room temperature.
