Spinach and feta turkey meatballs!
2 tsp. coconut oil
4 c. baby spinach
1 lbs. ground turkey
1 egg
2 clove garlic
2 oz. feta cheese
Heat coconut oil in a large pan over medium-low heat. Add spinach to the pan, and wilt, stirring as needed. Remove from heat, and let cool.
Preheat oven to 375ºF. Line a baking sheet with parchment paper.
Combine ground turkey, egg, minced garlic, crumbled feta cheese, and cooled cooked spinach in a large bowl. Use hands to mix together until fully incorporated. Form mixture into 12 meatballs, arrange on baking sheet, and bake for 20-25 minutes.
