Grapefruit and Quinoa Breakfast

This is delicious and great for boosting your metabolism!


    1 grapefruit, fresh, organic

    1/2 c. white quinoa

    1/3 c. pistachios, raw, organic

    1/2 tsp. cinnamon

    1/2 tsp. fresh ginger

    2 indv. stevia packet


Cook quinoa in 1 cup water, bringing to a boil then simmering for about ten to twelve minutes. Toss together with the meat of the grapfruit and the rest of the ingredients. Enjoy! Note: add more nuts or an egg on the side for more protein.
