This gluten-free recipe for a tasty pumpkin treat is awesome!
2 egg
1/2 c. almond butter
1/2 c. pumpkin puree, canned
1/3 c. maple syrup
2 tsp. pumpkin pie spice
2 tsp. vanilla extract
1/2 tsp. sea salt
1/2 tsp. baking soda
Preheat oven to 350°F. Generously grease an 8 x 8 pan with either coconut oil or butter. In a medium bowl whisk the eggs. Add the almond butter, pumpkin, and maple syrup. Whisk, mixing well. Add the rest of the ingredients and do a final whisk to mix well. Pour into prepared 8 x 8 pan. Bake for approximately 25 minutes. Edges will be golden brown and toothpick should come out clean.
