This protein-packed bread holds together nicely and has a fairly pleasant texture compared to some commercial gluten-free breads. It is also packed full of nutrients and is guilt-free!
1/4 c. ground flax seeds
2 tbsp. coconut flour
1/4 tsp. sea salt
1 1/2 tsp. baking soda
5 egg
1/4 c. coconut oil
1 tbsp. honey, raw
1 tbsp. apple cider vinegar
1 1/2 c. hazelnut flour
Preheat oven to 350ºF. Grease a small loaf pan (I used smaller than a regular sized pan, it makes a small loaf already and if you use a large loaf pan your bread isn't going to be regular bread sized).
Combine hazelnut flour, flaxseed meal, coconut flour, salt, and baking soda in a food processor. Pulse until well combined. Add eggs, coconut oil, honey, and apple cider vinegar. Process until smooth. Pour into greased loaf pan and bake for 30 minutes.
*Almond flour (or any other nut flour) can be substitute for hazelnut flour. **I used 1/2 teaspoon of salt, but 1/4 teaspoon would also work - it just depends on your taste.
