Grain Free Power Bread

This is a fiber filled grain free bread that I now can't live without! Super easy and goes with either sweet or salty, for toast in the morning or sandwiches for lunch. It's loaded with fiber protein and healthy fat that will keep you going throughout the day!

Ingredients

    1 c. coconut flour

    1 c. ground flax seeds

    1 tsp. sea salt

    2 tsp. baking soda

    10 egg

    1/3 c. Greek yogurt

    1/2 c. butter

    1 tbsp. apple cider vinegar

Directions

Preheat oven to 350 F or 180 C. Grease a loaf pan with organic butter or extra virgin coconut oil (I now place baking paper on the bottom of my loaf pan and then grease the pan because the flax tends to like to stick real good). Mix all dry ingredients together in a bowl. In a separate bowl whisk eggs with yogurt. Add egg mixture as well as melted butter to dry ingredients and mix well. Add the Tablespoon of Apple Cider Vinegar last then place the mixture in pan and bake for 40 min (may need more depending on the oven). Enjoy!

*Per Jennifer: "I sliced it into 16 this time but those are fairly generous slices." If one loaf makes 16 servings, each slice would count as 1 protein and 1 fat. (The fat is from the butter.)
