I could actually make a meal of these tomatoes. Very yummy!
1/2 c. cracker, crispbread, whole-grain
2 1/2 oz. blue cheese
1/4 uncured bacon
2 tbsp. green onion
2 oz. coconut oil
3 lrg. tomato
sea salt & black pepper to taste
Preheat oven to 500 degrees. Line a small rimmed baking sheet with aluminum foil.
In a small bowl, combine the crumbs, cheese, bacon & green onions. Add melted coconut oil, stirring to mix well. Cut tomatoes in half crosswise. Place the tomatoes, cut side up, on the prepared baking sheet. Sprinkle tomato halves evenly with salt & pepper to taste. Divide the cracker mixture evenly among the tomato halves. Turn preheated oven from bake to broil and cook 5 inches from the heat until lightly browned, 6-8 minutes.
I used 2 Ryvita Sesame crackers from WinCo to make the 1/2 cup of crumbs.
