this is a tasty high protien snack. Gluten free also. Keeps for a while in fridge.
2 c. amaranth, organic
1/2 c. honey, raw
1/2 c. nut butter
1/4 c. pumpkin seeds
1/4 c. dried cranberries
Mix equal parts of honey and nut butter together. 3/4cup each. mix in your optional ingredients if you want. then mix in the 2cups popped amaranth seeds. form into balls. (i use a melon scooper) chill in fridge so they get firmer.
To pop amaranth seeds - In a nonstick pan on high heat add about 1 tbls at a time till they pop. They will only take a few seconds to pop. Can be messy as some will pop out of pan. They will burn easy. (I practiced a few times to get it right. You can look up popping amaranth seeds online and watch videos).
