Easy pancakes that are gluten free.
1 tbsp. stevia
1/2 tsp. vanilla extract
1 tbsp. ground flax seeds
1 tsp. baking powder
stevia to taste
1 c. oats, whole, dry, organic
2 egg
1/2 c. cottage cheese
Mix all ingredients together. Pour out batter onto a hot griddle, making four pancakes. Serve with fruit, nut butter, or maple syrup.
