Gluten-free Hippie Meatloaf

This delicious meatloaf is totally grain and gluten free. A lot like my grandmother's but without the bread! Rich in O-3's it's also good for you.

Ingredients

    2 tbsp. ground flax seeds

    1 1/2 lbs. ground beef

    1 c. onion

    2 tbsp. coconut flour

    2 tbsp. garlic powder

    1/2 tsp. sea salt

    1 tbsp. black pepper

    1/2 c. hemp seeds

    1 can tomato paste

    1 tbsp. dijon mustard

    1 tbsp. paprika

    2 lrg. egg

    2 c. almond meal

    1/2 ground cumin

    1/2 c. sunflower seeds

    1 c. carrot

Directions

Preheat oven to 350.

  1. Pat dry ground beef and place in a large bowl.
  2. Add chopped carrots, onions, seeds and other dry ingredients and mix well with hands.
  3. Mix eggs in bowl with dijon mustard and mix into meat mixture.
  4. Press into regular un-greased bread pan. Top with thick layer of tomato paste. Sprinkle top with a few cumin seeds.

Bake uncovered for 90 mins (you may want to put a cookie sheet under the loaf pan in case some grease escapes).

Let cool 5-10 mins. Slice into 1 inch slices (1 serving) or 2 thinner slices, depending on appetite. Serve over mashed cauliflower for a homestyle meal.
