Grate your own cheese as pre-grated cheese has corn/potato starch to prevent clumping
8 oz. sharp cheddar cheese
4 tbsp. butter
1/2 tsp. sea salt
1/4 tsp. garlic powder
1/8 tsp. paprika
5 tbsp. water
1 1/4 c. spelt flour
In food processor with metal blade in put all ingredients except ice water (the butter should be cold, unsalted, and cut into pieces). Process the ingredients for approximately 1 minute on short pulses.
Adds 3 tbsn of ice water and process for 1-2 min continuous until dough forms ball that "rides" blade. Add 1-2 more tbsn ice water as needed. Wrap dough and chill from one hour to overnight in refrigerator.
When ready to bake preheated oven to 375° working with 1/3 doth at time put dough between 2 sheets of parchment paper and roll to 1/8" thickness. Cut out shapes and place on baking sheet lined with parchment paper.
Bake for 6-8 minutes and remove after they have puffed up and edges start to turn golden brown.
Cool completely on flat surface and store in airtight container.
