This recipe is one I've adapted from my Vita-Mix cookbook to fit the BD lifestyle
1 c. old-fashioned oats
1 1/2 c. canned coconut milk
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. sea salt
3/4 c. old-fashioned oats
1/4 c. ground flax seeds
2 tbsp. sunflower seeds
1 c. blueberries
1 tbsp. coconut oil
Process 1 cup of oats in a blender or food processor to make flour (or you could just use oat flour instead). Combine ground oats, coconut milk (or almond milk), baking powder, baking soda, ground flax, and sea salt in a blender or food processor. Pulse until well blended. Mix in 3/4 cup oats, sunflower seeds, and blueberries (fresh or frozen) just until blended. Let sit for 5 minutes.
Heat coconut oil in a pan over medium to medium-high heat. Pour about 1/3 cup of batter in the pan. Let cook until the edges start to brown and the surface is bubbly. Flip and cook on the other side until done.
Serve with organic, grass-fed butter and pure maple syrup or top with fresh berries. Yum!
