Two of these hearty filling muffins create a complete snack or breakfast.
3 med. banana
4 egg
1/4 c. coconut oil
2 tsp. vanilla extract
1 tsp. honey, raw
3 c. almond flour
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. sea salt
5 scp. stevia
1 c. walnuts
Preheat oven to 350°F. Grease or line a muffin pan. In large/medium mixing bowl, mash ripe bananas. Add eggs, melted coconut oil, vanilla, and a drizzle of honey, and mix well. In smaller mixing bowl, combine almond flour, baking soda, cinnamon, salt, and stevia. Mix with a fork. Add dry ingredients to wet ingredients, and mix well. Fold in nuts. Scoop into prepared muffin tin and bake about 20 minutes till tester comes out clean. Enjoy!
