I formulated this recipe myself, not having found other recipes that quite hit "the mark". This one is pretty tasty.
1/4 c. butter
2/3 c. honey, raw
2 c. banana
1 red apple
4 egg
2 tsp. vanilla extract
4 c. brown rice flour
2 tsp. baking soda
1 tsp. sea salt
2 tsp. cinnamon
1 c. walnuts
In large mixer bowl, using paddle attachment, cream together butter and honey. Add mashed banana, shredded apple, eggs, and vanilla. Mix well. In separate bowl, combine dry ingredients. Add to mixer bowl and combine just until ingredients are thoroughly moistened. Add walnuts and mix in.
Coat 2 loaf pans with either butter or coconut oil. Spoon batter into the loaf pans, dividely evenly between the two pans. Place in preheated 325 degree oven, and bake for approximately 60 minutes.
Slice each loaf into 12 slices.
2 loaves = 24 slices
2 slices = 1 serving
