Baked salmon with ginger, cilantro, and lemon pepper. No fish smell in the kitchen!
5 oz. salmon
2 pce. fresh ginger
2 tbsp. cilantro
2 tsp. lemon pepper seasoning
Turn on the oven, 350°F. Rip off a 12"x12" piece of aluminum foil. Clean the fish in water, you can squeeze some lime into the water if you want. Dry the fish. Place the salmon on the foil. Sprinkle it with lemon pepper (to taste). Lemon pepper contains salt, so no further salt is needed. Add the slices of ginger on the salmon. Place cilantro on top (enough to cover the piece of salmon). Bring two of the sides of the foil up and together like a roof top. Keep rolling until touching fish. Bend up and cram the other sides so that the fish is enclosed. Cook in preheated (350°F) oven for 24 minutes. (Just cook it longer if you cook larger quantities. It's ready when it smells good in the kitchen). Remove from oven. Loosen one end of foil package over sink, pour out liquid if you don't want it. Open package, remove skin. Easy :-) Place on plate and enjoy. I eat the ginger and cilantro together with the fish, yum...
Since salmon contains valuable, brain boosting Omega-3 fatty acids, I feel better if I don't have my other fats with this meal. If you make this for 20 people the baking time increases to 1.5 hour. If no one turns up :-) you can freeze all the packages and take up one and one package, defrost it on the counter top, and make a lunch salad with lettuce, celery, cucumber, and tomato, and put 4 oz or 5 oz of the salmon on top for lunch. The fish tastes like freshly baked!
