6 egg
1 c. almond milk
3 tbsp. coconut oil
2 tsp. vanilla extract
2 tsp. maple syrup
1/4 c. coconut flour
1/2 tsp. baking soda
1/8 tsp. nutmeg
2 red apple
2 tbsp. coconut oil
2 tbsp. honey, raw
1 tsp. cinnamon
1 tsp. nutmeg
1 tbsp. lemon juice
1 hndfl. pecans
Preheat oven to 425° F.
In a large bowl, whisk together eggs, almond milk, 3 tablespoons of coconut oil, vanilla, and maple syrup. In a small bowl, stir coconut flour, nutmeg, and baking soda. Mix dry ingredients into wet ingredients and beat well to combine. Set aside.
In a small frying pan, heat 2 tablespoons of coconut oil and honey. Stir in cinnamon, nutmeg and lemon juice, and cook for 1 minute. Add apples and sauté until all the apples are nicely coated with the other ingredients.
Grease 8 ramekins with coconut oil. Divide the apple mixture into the ramekins. Layer the egg mixture on top of the apple mixture.
Place ramekins on a baking sheet and bake for 20 minutes at 425° F. Reduce heat to 375° F and cook for an additional 20 minutes. Remove from oven and sprinkle with pecans. Enjoy!
