With an abundance of fresh organic produce available at our local farmer's market, this gazpacho is an easy-to-assemble summertime soup!


  • 4 c. tomato soup, low sodium, organic
  • 1 c. cucumber, fresh, organic
  • 1 c. tomatoes, red, fresh, organic
  • 1/2 c. bell pepper, green, fresh, organic
  • 1/2 c. onion, sweet, organic
  • 3 tbs. olive oil, extra virgin, unrefined and unfiltered, organic
  • 1 tbs. lime juice, pure, organic
  • 3 garlic, fresh, organic
  • 1 tsp. vinegar, red wine, organic
  • 1 tsp. vinegar, apple cider, organic, unfiltered, raw
  • 1/4 tsp. sea salt, unrefined and pure
  • 1/4 tsp. black pepper, ground, organic
  • hot pepper sauce, organic to taste


Chop tomato, pepper, and onion. Mince garlic. Combine all ingredients except cucumber slices in a large bowl. Chill at least 6 hours (I usually prepare the night before I plan to serve) for flavors to blend. Mix well before serving. Garnish with sliced cucumbers, if desired.
