With an abundance of fresh organic produce available at our local farmer's market, this gazpacho is an easy-to-assemble summertime soup!


  • 4 c. tomato soup, low sodium
  • 1 c. cucumber
  • 1 c. tomato
  • 1/2 c. green bell pepper
  • 1/2 c. sweet onion
  • 3 tbs. extra virgin olive oil
  • 1 tbs. lime juice
  • 3 garlic
  • 1 tsp. red wine vinegar
  • 1 tsp. apple cider vinegar
  • 1/4 tsp. sea salt
  • 1/4 tsp. black pepper
  • hot pepper sauce to taste


Chop tomato, pepper, and onion. Mince garlic. Combine all ingredients except cucumber slices in a large bowl. Chill at least 6 hours (I usually prepare the night before I plan to serve) for flavors to blend. Mix well before serving. Garnish with sliced cucumbers, if desired.
