This is a yummy bean dip that goes great with your choice of veggies. Please note that the garlic is strong, hence the title, so depending on your taste, you may want to decrease a bit. As is, it's a winner in our house :o)
1 can cannellini beans
1 clove garlic
1 tbsp. extra virgin olive oil
1 tbsp. lemon juice
2 tbsp. fresh chives
1/4 tsp. sea salt
Combine all ingredients in a food processor and blend. After 30 seconds or so I scraped the sides, and then processed it for about 20 seconds more. This was sufficient to achieve the smooth consistency I was looking for. I hope you enjoy it as much as we do.
