It's food on a stick... who doesn't love food on a stick?!
12 oz. beef sirloin
4 clove garlic
2 tbsp. dijon mustard
1 tbsp. tamari, organic
1 tsp. paprika
2 tbsp. apple cider vinegar
2 tbsp. extra virgin olive oil
2 tbsp. fresh ginger
6 cherry tomato
6 white mushrooms
1/4 lrg. onion
1/4 lrg. green bell pepper
3 clove garlic
sea salt & black pepper to taste
1 tbsp. honey, raw
Fire up the grill OR preheat oven to 450ºF. Cut the sirloin into 1/2-inch thick strips. Soak 4 wooden skewers in cold water for 30 minutes.
Prepare the marinade: Combine 4 cloves of finely chopped garlic, finely chopped ginger, Dijon mustard, tamari, apple cider vinegar, olive oil, honey, and paprika in a bowl. Stir to mix well. Add beef strips to marinade, coating well, and let sit for 30 minutes at room temperature.
Meanwhile, arrange cherry tomatoes, mushrooms, onion (cut into 2-inch cubes), green pepper (cut into 2-inch thick strips), and 3 whole garlic cloves on 2 of the skewers, alternating to make a colorful creation. Arrange beef on remaining skewers.
Place the beef and veggie skewers on a large baking sheet lined with parchment paper, alternating the beef and veggies, and drizzle remaining marinade over the skewers. Sprinkle with salt and pepper. Bake for 15 minutes, turning halfway through cooking and enjoy!
Note: These taste BEST on the grill but that's not always possible so the oven is the next best thing!
