This may be a simple dish, but it has lots of flavor.
1/4 tsp. dried thyme
4 oz. chicken breast
sea salt & black pepper to taste
1 med. zucchini
2 tsp. avocado oil
1 clove garlic
1/2 tsp. dried oregano
Heat avocado oil over medium-high heat in a skillet. Add minced garlic, oregano, and thyme. Add chicken and cook for 3-4 minutes on each side (making sure to coat the chicken with the oil and spices), until chicken is cooked through. Remove chicken from heat, and set aside.
Add sliced zucchini to the skillet, and season with sea salt and pepper. Sauté for 2-3 minutes, until tender. Add chicken back to the pan for a minute. Serve warm.
