Garlic Chicken, Spinach, and Rice

A delicious chicken and rice dish!


    2 tsp. avocado oil

    2 clove garlic

    1/2 c. brown rice

    2 c. chicken broth

    2 c. baby spinach

    1/2 lbs. chicken breast

    1/2 tsp. garlic powder

    1/4 tsp. sea salt

    1/4 tsp. black pepper


Cut chicken breast into chunks. Season with garlic powder, sea salt, and pepper. Heat avocado oil in a skillet over medium heat. Add chicken chunks to the skillet and cook, stirring as needed, until browned. Add minced garlic to skillet and cook for an additional 30 seconds.

Add rice and chicken broth to the skillet; stir to mix well. Bring to a boil, cover skillet, and reduce to a simmer. Cook for 20-25 minutes, stirring occasionally.

When liquid is gone, remove pan from heat and place baby spinach on top of rice. Cover and let sit for about 5 minutes. When spinach is dark green and has wilted a bit, stir together everything in skillet. Serve warm.
