This is such a fresh tasting salad/side dish. I can sit and eat the whole bowl by myself and its pretty healthy so I probably can
15 oz. cooked chickpeas
1 1/2 tbsp. lemon juice
1 sml. tomato
3 tbsp. extra virgin olive oil
sea salt & black pepper to taste
1 tbsp. red onion
Rinse and drain 1 can of garbanzo beans and place in bowl. Add chopped tomatoe, onion, lemon juice and olive oil, and toss together Add salt and pepper to taste Let sit at room temperature for 20 minutes. Mix again before serving
