Drenched in coconut flour, simmered in white wine cooking, it is a yummy comfort food.
4 chicken breast, skin-on
1 c. coconut flour
2 egg
1 clove garlic
4 tbsp. butter
1 dried parsley
1 chicken bouillon
1 c. white wine
Wash chicken & dry. Pound to 1/2 inch thickness. Dip each chicken breast in egg. Pour coconut flour in plastic bag and shake chicken in flour until well coated.
Slowly, at low heat, melt butter in electric skillet or non stick pan. Brown chicken on both sides--do not cook through.
Remove chicken and set aside.
Add garlic, parsley, wine and boullion cube. Stir and heat until boullion cube is dissolved.
Add chicken and cover. Simmer until chicken is cooked through, turning once, approx 15-20 mins.
