I am from the south so I had to think of a way to have fried chicken, so here's what I did and it came out wonderful. My whole family loved it!
3 chicken thigh, skin-on
10 cracker, crispbread, whole-grain
2 egg
1/4 tsp. garlic powder
1/4 tsp. cayenne pepper
1/4 tsp. sea salt
1/4 tsp. black pepper
1/4 c. water
3 tbsp. coconut oil
Crush rye crackers (place in a large ziploc bag and crush with hands). Add spices to the bag. Use measurements as guidelines - season to your taste. Mix egg and water in a small bowl. Beat until mixed well. Dip the chicken thighs in the egg mixture, and then put in the bag with the crackers and spices and shake until chicken is coated. Remove from bag, and fry in coconut oil in a skillet.
