Quick and easy recipe for pulp-free coconut milk. No cheesecloth needed.
1 young coconut
1 c. water
An easy way to do this without cheesecloth but with a colander is to purchase the coconut that has water inside. Use a hard knife and cut at the top like an X. Make a hole, put a straw and enjoy the fresh water or store it.
Then scrape the moist coconut off the shelf with a spoon. You will need to make a bigger hole to do this. Once you can put a spoon inside the coconut, scrape off the coconut into a small bowl.
You can store the entire scraped coconut in the refrigerator for a few days in a Tupperware until you are ready to make coconut milk.
(Or store the entire coconut shell with the moist coconut inside it for a few days until you are ready to cut a bigger hole and scrape the moist coconut to put it in the blender!)
To make coconut milk: pour 1 cup of hot water in a blender with the scraped coconut. Blend for 3 minutes and voila! You have fresh coconut milk! No pulp. Just milk comes out of this.
Use the a colander to make sure small coconut hard particles get removed as you pour the fresh milk into a container which you can store back into the refrigerator to savor when you are ready. Enjoy!
