A sweeter egg scramble... tastes like French toast!
1 med. banana
2 egg
1 tsp. cinnamon
1 tsp. vanilla extract
1 tbsp. coconut oil
1 tbsp. almond butter
Mash banana in a bowl. Crack eggs into the bowl. Add cinnamon and vanilla, and stir to mix well.
Heat coconut oil in a skillet over medium heat. Pour banana mixture into the skillet. Cook, stirring frequently, until eggs are cooked through.
Move to a plate, top with almond butter, and enjoy!
