French Onion Soup

BD Friendly French Onion Soup


    6 tbsp. sherry, cooking

    1 tsp. worcestershire sauce

    4 oz. Swiss cheese

    black pepper to taste

    2 tbsp. butter

    3 lrg. sweet onion

    4 c. beef stock


In a large saucepan, melt butter. Thinly slice the onions, and add to the saucepan. Cover and cook over medium-low heat, stirring occasionally for about 10 minutes. When onions are tender, add beef broth, sherry, Worcestershire, and pepper. Bring to a boil, then reduce to a simmer, and cover for about 10-15 minutes. Pour into bowls and top with shredded raw Swiss cheese. It will melt on the hot broth.

Optional: You can toast sprouted grain bread for a more traditional French Onion Soup. Place toasted bread on top of soup, then add cheese. Optional: If you have oven ready soup crocks, place bread, then cheese and broil till cheese is bubbly and golden brown.

I make this without any bread. It is quick and easy to serve from pot to bowl with grated raw Swiss cheese on top.
