Perfect side for the holidays!!
1 lbs. green beans
1 pinch sea salt
2 tbsp. butter
2 tbsp. extra virgin olive oil
1 med. yellow onion
Preheat oven to 375 degrees. Place green beans, 1/2 cup water, and a little Sea Salt in an ovenproof skillet; cover, turn stove to medium-high heat and cook until beans are bright green and crisp tender, about 5-6 minutes, drain.Remove beans from heat and dunk in ice water, drain, set aside.
Meanwhile, heat butter and 1 tablespoon butter and 1 tablespoon extra virgin olive oil over medium heat. Add onions; cook until soft and lightly golden, about 5 minutes. Add fresh minced garlic; saute 1 - 2 minutes. Add mushrooms, saute until golden, about 5 minutes. Add organic chicken broth (or homemade); simmer until it starts to thicken, a couple minutes or so. Stir in sour cream and parsley; then add the green beans; and cook until hot. Transfer to oven; heat about 10 minutes.
Meanwhile, heat remaining oil in a medium saute pan over medium heat. Add the bread crumbs and almonds; stir until golden, 2 or 3 minutes. Add lemon zest and sea salt and fresh ground pepper, to taste. Sprinkle over the warm green beans, and serve hot!
