The fragrance of this shrimp cooking in coconut oil, ginger, garlic, and coriander is absolutely heavenly... thus the name Fragrant Shrimp. This is a quick saute, so have all the ingredients ready to go.
1 tbsp. coconut oil
lemon juice to taste
5 oz. shrimp
1/2 tsp. fresh ginger
1/2 tsp. coriander seed
1 clove garlic
Peel and de-vein shrimp, leaving tails on. In a saute pan over medium heat, add coconut oil then add minced garlic and fresh grated ginger. Saute briefly, for about 30 seconds, then add coriander and shrimp. Season with sea salt and pepper. Saute for 2-3 minutes, then add a splash of lemon juice and (optional) a splash of Pinot Grigio. Cook another minute until shrimp are done.
I served this alongside green beans sauteed in coconut oil and raw almonds.
