Fluffy Pancakes

This quick and easy pancake recipe is very simple and it makes delicious fluffy pancakes in minutes!

Ingredients

  • 2 tsp. baking powder, aluminum-free
  • 1 tsp. sea salt, unrefined and pure
  • 1/4 scp. Spring of Life Plant-Based Protein Powder, chocolate
  • 1 egg, omega-3, cage-free, organic
  • 1 1/2 c. milk, full-fat, raw, grass-fed or pastured cows, organic
  • 2 tbs. butter, unsalted, organic, raw or unpasteurized, grass-fed/pastured
  • 1 tbs. coconut oil, raw, extra-virgin, organic
  • 1/3 c. coconut flour, organic
  • 1 1/8 c. flour, spelt, whole-grain, organic

Directions

Heat coconut oil in a skillet over medium high heat.

Mix dry ingredients in medium bowl.

Mix wet ingredients in a separate small bowl.

Fold wet ingredients into dry ingredients until all flour is mixed in well.

Pour batter onto griddle in 1/4 cups. If you want, you may add blueberries (fresh or frozen) or strawberries onto the pancakes. Flip after about 2 minutes or when golden brown. To know when pancakes are fully cooked, stick a toothpick in center and cook until there is no more batter coming onto the toothpick or cook until edges are dry.

Top off with butter, fresh berries and sliced banana, pure maple syrup or raw honey and uncured, nitrite- and nitrate-free bacon.
