Flax Seed Muffin

A healthier skinny muffin. If you eat all five muffins its considered a protein. I eat them throughout the day to help curb my appetite. This gives me the fiber I need too.


    1 tsp. coconut oil

    1 tsp. coconut sugar

    2 tbsp. walnuts

    2 tsp. coconut flakes

    1 egg

    1/4 c. ground flax seeds

    2 tsp. cinnamon

    1 tsp. baking powder


Mix all ingredients together and spoon into muffin tins. Chopped walnuts and coconut flakes can be added to your taste. Also you can add the coconut sugar to the mix or save it and crumble on top of the muffin before baking. Bake at 300 degrees for about 10 minutes. Remove from oven and enjoy. This makes 5 or 6 mini muffins. Can be enjoyed with almond butter or natural peanut butter for a snack with a green tea. Enjoy!
