My mom created this recipe from an idea she got at a restaurant and it's FABULOUS!!
2 med. zucchini
1 egg
3 tbsp. canned coconut milk
sea salt to taste
1 tsp. coconut oil
3 tbsp. ground flax seeds
Slice the zucchini into thin, round slices after washing it.
While heating coconut oil in a deep frying pan, whisk egg and milk together to combine it.
Dip zucchini slices into egg/milk (make sure you coat both sides)
Dip zucchini slices into the flax (seasoned with sea salt). Also be sure to coat both sides!
Gently place coated zucchini slices into the heated coconut oil.
Fry zucchini slices on both sides until golden brown (about 2-3 minutes).
Remove from hot oil and place on a paper towel to drain some of the oil.
Enjoy! (Best when hot!)
